Hazard Analysis and Critical Control Points.

HACCP is a Quality Standard for Food industry intended to guarantee the inocuity of any processed foodstuff.

It comprises two general stages for implementation:

1.- Prerrequisites Program : They are the general conditions that any food processing facility has to comply with in order to guarantee that any serious risk of food contamination is eliminated or at least controlled (example of prerrequisites: pest control, good manufacturing practices, sanitary facilities, chemicals control, etc.)

2.- Making of the HACCP Plan and organizing the Team work in order to implement it. In this stage you should follow seven steps:

a) Detect the hazards in all process or products
b) Define the Critical Control Points
c) Establish control limits for each point
d) Establish critical control point monitoring requirements
e) Establish corrective actions
f) Establish record keeping procedures
g) Establish procedures for verifying the HACCP system is working as intended

HACCP requires a lot of training in all involved personnel during food processing. It needs compromise from all the personnel.
