You can get a pretty wide variety of jobs with a degree in electronics.
My bachelors is in electronics engineering, I'm currently working doing electrical engineering and drafting at an architectual firm.
My previous jobs have included working with industrial electronics - 3 axis routers and plasma cutters, overhead factory cranes, computer/network installation/repair , field service tech (my first position was doing warranty work on apple computers through eastman kodak.
Your best bet is to keep an eye on the classifieds, talk to temp agencies (a lot of companies hire through them so they can try you out before actually hiring you). Post your resume online - and decide whether your are willing to go where the jobs are.
Make sure to have a current resume - tailor it to each job you apply for.
