Well I have a 65 Rogue, and a 65 Shadow priest. I love to pvp with both, but it is a preference. Shadow priests tend to be a bit of glass cannons, huge burst of damage, not great with multiple targets, and can't really handle much close combat. The other problem with shadow priests are the fact that you will be getting hassled the entire time for not healing, also really hard to find grps that will allow you to melt faces instead of heal. Priests are easier to lvl if you are willing to suck up and heal for instances since everyone wants a priest in their grp. Rogues, my fav all around class by far. You can pwn pretty much any class with training and are very versitle in your type of play style. Rogues can be combat, steath, dagger, swords, fist, mace, etc.. all of which are pvp. Some times hard to find grps for pve, but no pvp grp will say no to a few more rogues.

Every single class can dominate in pvp, unlike some people might tell you. Back when there was only 60 levels and I was a pally i rolled a pvp damage build and people just laughed at me, but they soon stopped when i owned them in pvp. So what im saying here is it doesn't matter what class you are, its the way you play that matters. If you don't want to heal DONT MAKE A PRIEST. The best way for a healer to help in pvp is to yes, heal. If you don't want to do that you don't want to make a priest. If you get into serious pvp groups trust me, they'll need you as a healer, not as a damage dealer:P. Rogues are fun in pvp but it really depends what class you like to play best. I'd suggest making low level twinks for every class and test them out before you level up all the way.

I have a 48 rogue (assisination spec) and a 48 Shadow Priest (48 war, 48 mage, 64 hunter, 64 druid)

Shadow Priest absolutely deals more damage than any other (while healing yourself with vampiric embrace no less). Plus you can handle more than one attacker with your fear effects. My shadow priest can melt the face right off the opponent before they even get a funny look.

I think rogue would be better for you, as you like PvP. There will be more "up close and personal" fighting, rather than from a distance with the spell-caster.
