I used to teach this subject, and the key to being really good at customer service is how well you handle things when they go wrong. If you can deal with a difficult customer, and they go away happy, then you have done a good job.

they can sum up a personality in about 5 seconds

It is when you supply the service you advertise in an efficient, diligent manner with empathy. Your customers needs may actually be different to that which you offer. Point them in the right direction.
