Definitely play PVP. I played on a PVE server and regretted it so much.
If you prefer, pick RP PVP for that role-playing edge.

I don't think realm choice is a very big concern, I would choose a newer one though, less populated and you won't have to wait to get on during peak hours. If you like to role play, try it out, never tried an rp realm myself, most of my characters are on PvE. It's $15 a month, less if you choose 3 month or 6 month plans, meaning you pay for the 3 or 6 months all at once, you don't get refunded anything if you quit half way through the 6 month's if you pick that option.
Look at the racial skills, and see what looks good, I play alliance mostly so if you want to make a horde mage I don't really know what race would be the best for them. On alliance side, gnomes are probably the best since they get get a boost to intellect.
Good professions for a mage would be..., tailoring/enchanting or herbalism/alchemy. Just try out different things, you can always change later if you think you made bad choices. The best way to make money in the game though is to pick up 2 gathering professions and selll everything on the auction house

I'm glad to see you're interested in the game...plan on throwing away the next four years of your life! =)
You should DEFINATELY choose a medium populated PVP realm. RP is for gay fags who play female characters to satisfy their needs. PVP is for kicking the other faction's a double s, if you know what I mean.
Next, you have to choose a payment plan. If you buy your account for a 1-month contract, you pay $15 a month until you cancel. If you subscribe for a 3-month contract, you pay $14 a month until you cancel. If you subscribe for 6-months at a time, you pay $13 a month. So if you're not sure if you'll like the game, start off by paying for one month, then if you want to keep your account go to www.worldofwarcraft.com/account and change your subscription type.
And Undead Mage is a sick combination. My friend is an UD warlock and he kicks the crap out of anyone who challenges him. The easiest class to level is a warrior since they're not complicated to play, but a mage is a lot of fun.
