Its because the molecules are under pressure in the beer glass. When it falls on the pub floor, the molycules expand over the wider area of the floor and is more to clean up. When the barman doesnt like you, the molycules expand even more which is definitely a weird phenomena

its becuase the liquid is now spreading itself out over a large surface area but there is not much height in the spread therefore it goves the illusion of being more than it actually is.
