If you find yourself with an actual choice choose to slide. If you go into a roll at speed you will not be able to keep your arms and legs tucked in and they will slap against the pavement repeatedly which will give you lots of broken bones. So slide.
Think "superman" or "sliding into third base" to get an idea of what your body position should be like. Get your body as long as possible in the direction you are sliding in to keep from rolling. Go ahead and drag your helmet on the ground, that's what it's there for.
As far as wearing the skin on your butt off - wear a good pair of leather or textile riding pants and you won't lose any skin. Denim will be burned through by the friction, buttless chaps are good for keeping your legs warm but not much else.
Sure, proper riding gear can be warm. But sweat washes off. Road rash doesn't.

You'd have to slide a long way to wear through you LEATHERS!
Watch Moto GP or AMA racing and you'll see that rolling is BAD. The racers essentially slide on their backs, scuffing as much surface area as possible so they don't wear a hole in their leathers.
The idea is to wear down the whole suit just a little bit instead of putting a hole in one part. You are not protected when a hole wears into your gear.
You DO wear full gear, don't you? If not, then you get what's coming to you.

You do not want to roll because that will increase the change of you breaking somthing while you are tumbling. First of all, you should always wear full gear. If you fall, try to lay your body flat and relax(easier said than done). You want to put down as much surface area of your body on the pavement as possible so that you slow down quicker. Any struggling you do will not help you. You've already fallen. If you watch a racer crash, you will see that they are rarely seriously injured and in most cases, they try to jump right back on their bikes.

Well evidently you have never experienced road rash, sometimes you have no choice what part of your body is going to get ground off. I can't believe when I see somebody riding with no helmet and wearing short pants and sandals. I know they have never ate the pavement, but believe me if you ride enough years you will, it is called Murphy's Law. I have been riding over 40 years and been down three times all from people pulling out in front of me! Never been down because of bike failure. KNOCK KNOCK on wood!

The MotoGP riders are wearing very thick leather suits so their skin doesn't get scraped up. Your best bet is to wear a good padded riding suit, one made of fabric strong enough that it won't wear through if you go asphault surfing.

Dude......you should slid on your back.....and if you're wearing the proper gear there is no reason you should have to wear your skin off. People who ride without the proper gear are a pet peeve of mine. They remind me of mountain climbers trying to scale Everest in shorts ....your only going to get so far and its over. It's like hunting for Lions with a stick while wearing a meat suit ...... It's beyond stupid....... (And next we'll jump out of a plane using an umbrella as a parachute.)

When I had to (years ago), I found the best position was on my back, with knees drawn up almost to chest, arms crossed and helmet held up off the ground.
Of course, true accidents can't be planned.
It's kinda hard to flip on your back while in the process of taking out a windshield with your head 'cause a car suddenly pulled out in front of you. BTDT too.

It's better to have gear on so that can get scraped up rather than your skin.

It depends on what you're wearing. If you've got protective gear you can slide w/o "cheese grating" your flesh off .If you're in street clothes that will not hold up to sliding across asphault, then pull your arms into your body and try to roll.
