Always wine, never champagne. The type of wine depends on what you're serving. I prefer a Merlot or Shiraz with meat, chicken, or foods with heavy sauces (always serve reds at room temperature, never chilled); and a chilled glass of Pinot Noir or Sauvignon Blanc with fish, shellfish, or light pastas.
For Valentine's Day, I suggest get whatever is on sale at your local supermarket and serve it wearing a skimpy little French maid outfit.
