Your plan outline is good.
Having been to Hong Kong I know they are the leaders in this market with around 200 outlets. They use bright cheerful adverts on TV and offer prizes of money and MP3 players. This of great interest to Chinese people who like to gamble
I would agrue that the market is near saturation point and so to keep their lead they need to make their business more attractive to the local population instead of trying to offer a westernised food. They do offer some more typically Chinese items on their menu
