Soap is traditionally made from tallow and lye.

Tallow is animal fat (typically beef) - big fibrous chunks of fat that aren't really good enough to put in normal food, but they would heat it up and melt all the fat away and discard the fibrous stringy stuff. The fat that had been melted (rendered) was called tallow. It's considered inferior to "leaf" fat, which was traditionally used to make pastries.

Lye comes from wood ash. They would put the fireplace ashes in a wooden bucket and let water drip through it. The water that came through the bottom had soaked through the ashes and picked up the lye, so it was now lye water.

They'd boil the fat with the lye and come up with lye soap.

The reason they made it in the fall or spring is because those are the traditional butchering seasons and thus the most efficient times to make soap....any animals too big/expensive to keep through the winter got butchered in the fall. Early spring was good because it was still cold enough that they could take their time processing the meat (no refrigerators remember, only cellars and spring houses) so that it would last through until fall.

probably that is because they sheared the sheep at this time and used the lanloin for soap or they butchered the hogs and used the fat for soap. that is my opinion, not 100% sure though.

I think that you had to use a specific plant and then cook it. Plant (fall and spring) cooking it (outside),
