Tangerine is the latest spot to go dancing (located in Treasure Island on the strip). Ghost Bar is good too, if you can get in (long long line). To eat, I suggest Kahunaville in Treasure Island, they have a great Pina Colada Chicken and the atmosphere is cool.
Also, best hotel I would say to stay at is the Mirage (next door to TI). They're pool is awesome!!!

Well for you to go dancing, I would go to Rain or Pure. For Eating I would go to the America in the New York, New York, casino/hotel. But if you were to stay in a hotel, I would try Mandalay Bay, or the Bellagio! There pools are totally awesome!
