http://www.lionbrand.com rates their patterns from beginner to advanced. Just look for what you want and check the rating.

http://knittinghelp.com has a variety of free patterns. They are labeled by experience level. The size knitting needles that are recommended for the patterns are also listed. For the most part, you don't need to have the exact same size needle for a project unless knitting a sweater or article of clothing with a size (such as a hat or mittens). Most scarves, blankets, dish clothes, etc. can be made with a different size needle (just try to be sure your needles aren't too small/large for the yarn you're using... having the diameter of the yarn match the diameter of the needle is a good starting point).

About.com, and then search knitting. or lionbrand.com. or http://www.warmupamerica.org/, which has patterns for squares. You make a square or two or three, and then send them in to have them made into an afghan. The Squares can be as simple as knit every row, or you can experiment with color, or stitches. since the squares are small, you can do them quickly. and your worst mistakes can be easily hidden.
Have fun!

hi.
I've been making very simple bracelet's, mostly just to get rid of tag end's of yarn.
Basically cast on ten stitches, knit in stockinette for six inches. you can change colors as many times as you want. (six inches is the circumference of my wrist, yours might be different) bind off and seam the two ends together. and it does come on and off of your hand. (I do this on sevens)

Well, actually, mine are probably a bit more complicated.
I can tell you if you want, just I don't know if you mean beginner as scared of own shadow or willing to try everything but lace and the fancy color changing, ie. fair isle or whatever the other one's called, which is basically what I am.
