"And to Think That I Saw it on Mulberry Street" is by Dr. Seuss: http://www.amazon.com/exec/obidos/ASIN/0394844947/24680e-20

"Stephanie's Ponytail" is by Robert Munsch: http://www.amazon.com/exec/obidos/ASIN/1550374842/24680e-20

Could your "Spots" book be "The Sneetches and Other Stories" by Dr. Seuss? The first story is about these creatures called Sneetches, some of whom have stars on their bellies. The ones who do not have stars get them from a machine, and then the ones originally with stars are upset so they go through a star removal machine, and it goes on like that for a while.

On the Dr. Suess books:
Gereen Eggs and Ham
And to Think that I saw it on Mulberry Street

The only thing I can think of for the one you called "spots" is a book by Robert Lopshire called "New Tricks I Can Do!" It's about a 'creature' named Spot who can do tricks like changing the color of his spots, etc. Although it's not actually a Dr. Suess book, it is in "The Cat in the Hat Beginner Books" series.
