It obviously feels good and is a pack bonding behaviour.

The display of their stomach means they trust you and are submissive, but they enjoy being pet because it stimulates their "skin", if you will, just like grooming by another animal would. It's a bonding behavior combined with trust and a little hygiene. =D

Lying on their backs with their bellies up is also a way to say, "i trust you, and I know you love me... let me be submissive to show you", plus it feels good!
