For example, why is it spelled "Chaala" ... as in "Chaala Santosham?"
What would it mean or be if it were spelled "Chala?"

Most Indian languages have 12 vowels against 5 in English. The pronunciations are also different. That is the reason why certain sounds are indicated using two vowels. For instance, 'a' is pronounced as 'uh' and 'aa' is pronounced as the French pronounce 'a', but longer. 'i' is pronounced as in 'hit' and 'ee' is pronounced as in 'heat'.

It could mean different things in different Indian languages

Basically most indian languages have a sound 'a' and a longer (dheerga) sound 'aa'.

I know that Chaala means Very much, but Chala may not be a sensible word at all

if it will be

chala santosham means went happy

Every language is having its own script. English is having 26 alphabets. Most of the Indian languages have 52 alphabets. Tamil has less alphabets. But they have some alphabets dissimilar to any other Indian languages. To make a word by using the alphabets various practises were developed. To streamline them into regular pattern grammar emerged.
Usage of one or two vowel is to convey correct message.
when we learn languages teachers used to say in lighter vein bu to convey the right meaning some examples. I narrate one such one to your benefit and understanding.
In Sanskrit DEHI means please give. When we pray God for wealth or health we say DHANAM DEHI, AROGYAM DEHI.
If we change the same as DHANAM DAHI, AROGYAM DAHI it conveys to burn or destroy. Instead of asking to bestow we are asking for removing. Here the only vowel we changed is E to A.
but the meaning is totally changed. Similarly MADI means mind and MAADI means ours.

Two vowels give different pronounciation. They are necessary.
Like God and Good. ben and been.
In Indian languages we have deerghaas instead. So using two vowels seems a bit odd to some of you.
