When they dared to wander out away from the visible coastline they used the stars and the sun. There is good evidence that there were some rather sophisticated navigation methods nevertheless. The Piri Reis map showed up in the hands of Columbus, sourced from some Turk. It was drawn using spherical geometry which was not in use before 1810 or there abouts. Read "Maps of the Ancient Sea Kings" by Charles Hapgood. It is an eye opener by a genuine authority on cartography.

Without looking it up, and knowing only what I have learned, I'd say they used a combination of the horizon and celestial bodies positions...like the sun, moon and stars...the sun and moon are predictable and rise and set in the same relative position...the stars "wheel" around, the horizon is always the horizon....may be wrong, may be right...either way it was fun to speculate.
