You can go wherever you'd like--it's not as though you're wearing a shirt that says "I'm a Lesbian." Do some sight-seeing.
If you are talking about meeting others of your orientation, I'm certain that you will find them everywhere. You need not go to a place for "lesbians only."

Buy a copy of Diva magazine-it has a full listing for Edinburgh's Gay scene; clubs,bars,cafes etc...

you might try www.squirt.org if you go past the male porn pictures..it will give you a choice of finding gay bars in a certain area...it may be male orientated..but I don't think that it omits lesbians as such...it will give you the names and locations of gay bars etc.
