It depends how good you are at math. Generally bio will have less math than chemistry, which will have less math than physics, which is second only to math itself in the amount of math it has. So, if you're not good at math, bio would I guess be the easiest.
Of course, the converse of this is that physics might be the class that requires the least memorization (generally on exams you're given any formulas you need). Of course, this is made up for by the math, but if you feel better about your math skills than your ability to memorize things, then maybe physics is better.
The other factor, with regard to physics, is that in many schools generally it's a very competitive class, with people from a fairly wide variety of majors taking it (engineers and physicists obviously, but I know of situations where premed students and computer science students were also required to take it). So, physics will likely be more competitive (as far as I know, I could be wrong, but that's my impression).

Many people think that physics is the hardest, and that biology is the easiest, but a lot of that depends on the person and on the way the subject is taught. Even the simplest subject can be taught in a way that makes it very difficult!
I'm a physics professor, and I believe that too many other physics profs teach physics as if it is *supposed* to be hard, and so they make it harder than it needs to be.
Physics is also the most math-intensive of the three subjects, which of course scares away people who are math-phobic (which is a lot of people).

chemistry and physics require lots of math, so some people who aren't good in math think those are harder. biology has more reading and memorization. So if you are more of a math person, chemistry and physics are easier. If you are more of a verbal person,biology is easier.

If you're proficient at math, the basics of chemistry is the easiest. It has the electron shells of the atom, the periodic table of the elements, and the concepts of how it all fits together. At the more advanced levels, it doesn't rank with the others, because the advanced concepts build upon the basics.

I agree with bio. If you do not do well in science, try taking it in the summer. There are far fewer students which means more student/professor interact...
