When someone says "umm" it means that they are thinking. Didn't you ever have a conversation with someone and you were telling them or asking them something and they made the sound "umm," that is just a pause sound in which the person is thinking/contemplating a thought or what was said to them, etc... It's kind of the same as "hmm."

It's just something people say .. it has no real meaning. People say it because they are having trouble putting a sentence together or don't know what to say next or are just nervous. It's just a funny habit people have.
