I have triple major in Political Science, Economics, and Black Studies. I want to eventually work in the field of Economic Development and Urban Planning, and maybe become a Real Estate Appraiser. I've read where employers frown on people who complete triple majors because it seems like they don't really know what they want to do. Is this true?

Triple major shows how diverse your knowledge is. What employers frown on more are people who stay at a job for less than a year, and show a history of that on their resume.
