when you say i ate an apple, does it mean you ate all of it? or could be just part of it

You probably mean you all the edible parts of the apple. If you do not mean that you could say "I ate some of the apple", "I ate part of an apple" "I ate a piece of apple" or even, though it sounds a bit old-fashioned, "I ate some apple".

it means you ate all of it, minus the core. if there was a big bruise, you probably didn't eat that part. it's possible you got tired of it and threw it out before you finished, but that's a little weird and wasteful. you could also refer to that as eating most of an apple.

to me it usually means that you at all of the apple.
