I would bow down before him/her and show respect. Then I would put down my sword and ask: "Please give me a chance to speak with you, mighty one of the ancients." Then there are two cases: 1st: I speak 2nd: I die. The Dragon decides. It is his/her right.
But I will die proudly: "I have met a dragon..."

I work with a couple of old dragons, and yes I have to talk to them. But to answer your question, if I were looking straight at a dragon and it was looking back at me, what would I do. 4: Faint, or probably wake up.
