If you are a believer then it is believed by some that when you sneeze your spirit leaves your body so people say "Bless You" to protect you for that period of your sneeze. Think in modern day time bless you is said with no reason known or understood of this old day belief.

It's an old custom from Antiquity. Romans considered sneezing a bad omen. So when people around sneezed, it was polite to wish them good luck. Christians modified the pagan wording into God bless you. It wound up being simply bless you these days.

It comes from the belief that when you sneeze, your soul is trying to escape your body, saying bless you will prevent it from escaping.
It could also come from the time the Spanish flu was an epidemic. Once somebody sneezed, it was practically death for them, so they gave them their blessing.

Partly tradition I would assume.
Unless I am mistaken though I believe when you sneeze your heart stops for that second. So "technically" your dead. So a person would say bless you, for not dieing.
Or so I was told as kid.

Sneezing is signal of starting getting sick. "Bless you" or "God bless you" means "hope you are fine" or "God will cure your sickness."
