as i understand the phrase, its origins have to do with weighing anchor.

Probably about the same time 'SHOPPE' became 'SHOP' and 'GAOL' became 'JAIL'... Us Americans have a tendancy to spell things the way we want to and then mold the rest of the world's reality about that...

Oh, don't forget 'CHEQUE' becoming 'CHECK'

i guess because when you have weighed anchor, you will be heading somewhere else , and so be under way.. but I dont know who or when started spelling it that way.
