I keep swallowing, my nose plugs up, and air forces out. How do I prevent this? Does it have to do with all the spit on my mouth making me swallow? I'm totally freaked, and I don't want to pause every five seconds....

HELP!!!

Take a breath. Seriously I know it seems stupid but I've seen too many people try to do a monologue in one breath for whatever reason, and not only does the performance not look convincing but who talks like that normally?

Without knowing what the material it's hard to suggest, but try to find spots that you can take a rest stop. Take a breath, swallow the spit, refocus yourself, count to ten, whatever it is you have to do. And TRY to relax, this is afterall supposed to be fun.

It might help you to go back into your monologue text, and mark very clearly for yourself all of the places where you intend to breathe. It's technical and mechanical, but it's all part of creating a rhythm for the piece that's comfortable for you. Once you know that you've got the text carved up into manageable chunks, you'll probably become much more confident with it.
