How do you go about conducting it? Do you just leave a recorder on all night and see what it picks up or is there more involved?

Almost any sort of recorder will work. Some better than others. Most people that actively try for EVPs use little portable units. Many say the new little digital ones are best, as opposed to the tape recorders.
There are a couple of different ways to go about it. First the proactive approach. That would be leaving the device recording while you ask things like "Is anyone there", "can you hear me", that sort of thing. Don't continuously talk or you may talk over an EVP.
Another way is if you have or know of an area that has some sort of activity leave a device on "voice activated record" and see if you get anything. There is another little trick to help you out on this, get one of those clocks that speak the time and set it to say the time every hour. This will give you some general time reference. There is the very slim chance that the clock will "speak" over an EVP. Plus debunkers would say, aw it's just the clock malfunctioning. But if you were doing a sort of investigation the time would be interesting to note.
Robin A mentioned the radio show "Coast to Coast am", and they have some folks on once or twice a month that do this sort of thing. It's great if you can catch the show. You can get a lot of information on the two sites below.
One last note, it may take hours of recording to get one decent EVP. Don't be impatient.

They had a Special on this once and usually talk A lot about this on their Radio Station. You could use a Tape Recorder, a Camera to see them , and some times on the Static on The Radio. You would usually say is anyone there? and state who. I would conduct it in a better place unless your House is Haunted. I wouldn't try It alone though.

A voice recorder is a good thing to have. You can leave it in a spot for a while but the besy way to go about getting evidence is asking questions and doing it for a while in one room then move to the next place.
