I really like the Packers because they are in a bad division, Favre will be back, their very young o-line will be more experienced, and they ended the season with a lot of confidence.
I also like the Bengals as they are poised to have a breakout season after such a disappointing 06 campaign.

Please, after the first few answers, do not write Colts, Pats, Saints, or Bears. This is for teams to watch (improve), not necessarily to win the superbowl.

Titans- they looked better and better every week after they put Young in
Bengals- Thet were good in 05-06 and should bounce back from a dissapointing season
Cowboys- I think fresh new coaching will help this team win with the talent they already have
Cardinals- They picked up some good "pieces to the puzzle" last season. I don't think they will make the playoffs but may be on their way in the next 3 seasons.
Finally, Miami- I think they are due. It seems like they have been close to getting over the hump and the new coach may just push them forward
As far as Atlanta goes I think it would be best for both the team and Vick if he were traded. I think he needs a fresh start with a team that will let him simply be him.

Atlanta Falcons.
With the new head coach, Vick will be able to change the play at the line. (with the old coach, all Vick could do is call the snap, or call the side the play was on. Other than that he had no control)
The Falcons are already a strong team. Vick isn't afraid to run the ball, and he is often underestimated. But now, they will have a better chance at a big plays. (vick can adjust to defence).
The only downfall to this is that Vick doesn't have experience explioting the defence's weaknesses. So they may have some difficulties in the pre-season

I like the Steelers chances. With a new motivated coach to shake things up and a healthy and fully recovered Big Ben, they'll be tough. The Saints are also gonna be a team to watch.
