sabbats, or esbats. witches don't really fly. some astral project, so people thought they could fly.
the broom isn't for flying, it's used for cleansing rituals and such. more of symbolic thing. kind of sweeping away the neg. energy.

There really isn't a way for a person to actually fly without the help of machinery. Like the person a few post before me said, it's due to astral projection. This happens due to a special blend of halluciagenic herbs which cause the person to think and feel like they are flying. The brooms are used as a clensing item, but were also used to insert more of the ointment into the vagina during the salem days of witchcraft.
