Well actually no one really knows. We just use it when we are in trouble like stuck on an island and you spell out S.O.S. Basically it's a distress signal.

Save our souls...or save our ship...either one...The souls one makes more since though because you can send an S.O.S. from land...you don't HAVE to be on a ship.

It's commonly thought that SOS stands for Save Our Souls (or Ship) but actually it doesn't stand for anything.
It's just a real easy and recognizeable signal in morse code:
dot dot dot, dash dash dash, dot dot dot
that's why it was chosen as the distress signal
