Pirates of the Caribbean 2 (1 is worth watching too though), the acting of Johnny Depp & especially Bill Nighy's acting, Geoffrey rush was great in the first one too. The special effects. The music/soundtrack (view end credits to play the whole thing). The amazing quality, the exciting storylines. Watch it on a big wide TV with 5.1 DD if possible, better still, a Projector with 5.1 DD. Or on a PC Monitor/LCD with headphones.
Look out for Harsh Times though as it should be a fantastic film (Training Day style) when it comes out on DVD.

I love Apocalypse Now
The visuals are incredible, and the soundtrack is just awesome (I always watch it with the sound way up). It also has some really memorable lines like 'I love the smell of napalm in the morning'
It's more of an experience than a movie (I could say that about 2001 too-but had to choose one film)
I never get tired of it

Its either Sergei Eisenstein's film "October" also called Ten Days that Shook the World about the 1917 Russian Revolution or Leni Leni Riefenstahl's Triumph of the Will about the Olympics in Nazi Germany. Not because of the political content of either but for the cinematic techniques utilised in both. Both are well worth watching from that point of view.

WoW!...Big question!!!!
If I have to choose one...it would have to be...Sergio Leone's 'Once Upon A Time In America'.
It is a huge story told in the most intimate way possible. It is violence and betrayal served on a bed of regret.
A great film is one that can show you what is amazing by comparing its storey to that which isn't.
If you want to know why friendship can be evil and the ultimate sacrifice at the same time?....watch this film.
As if that wasn't enough...the music will haunt you to your grave!
EDIT:
Don't disagree with the others....they're just wrong! LOL
No seriously...it's all a matter of taste but give this movie a chance...if you've never seen it...be ready to see one of the great movie experiences.

Total chick answer: Titanic. That is my favorite movie ever!! I can appreciate the message. You have to follow your heart and live for today because tomorrow is not promised to us.
I agree though that Shawshank Redemption is a great film.

The Notebook... It's a beautiful story and it gives me hope about my situation I'm in with this guy. It's about true love and how it never dies... it's just beautiful. And plus Ryan Gosling and Rachael McAdams are the best actors and have great chemistry.

Sorry I don't know the name. It's a black and white with actor James Mason. The moral was, you help people throughout your life without knowing it, wishing you had never lived affects everyone you have ever helped, because had you never lived, you couldn't have been there to help them. Great Film.

I loved the Godfather parts 1 & 2 (forget 3) real ground breaking exciting films, can watch them over and over also Shawshank Redemption.... great films
