My favorites were "Pride and Prejudice" and "Bluebeard," but the one that worked best for almost every essay topic imaginable was "One Flew Over the Cuckoo's Nest" - I didn't really like it, but it worked really well for the test.

(I didn't like The Great Gatsby by F. Scott Fitzgerald, but that is on the list. I also didn't like Antigone or Siddartha.)
