My workplace is the same way...extremely flexible. We can come and go as we please as long as we put our time in, attend the meetings we need to, and meet the goals laid out for us. I often take a 45 min lunch followed by a 30 min walk. But in an environment such as this, in my opinion, you will never get dinged as long as you put in your time. Some people put in 9 hour days, some have conference calls at night, etc.
I don't know if your company atmosphere/culture is exactly the same as mine, but it sure sounds like it is similar. If others are taking some extra time at lunch, I cannot imagine you'd be the only one held accountable.

Whether you are 5 minutes or half an hour late getting to work, your boss notices. No matter how laid back your work environment is, continually coming in late shows your boos that you don't respect the workplace, the business and most of all your boss!!! He/She may not say anything about it right now, but remember the time will come for employee appraisals and requests for raises. Then all the times you were late will be a huge deal breaker!

It sounds like you are comfortable in your environment. I would watch those around you and see what is the norm. If you are going to vary your lunch time, you may consider coming in 15 min early or leaving 15 late. That will be noticed and will do more to offset your leisurely lunches on occasion. If you can't do that consistently, at least try to be 5 min. early in the moring, and stay 5 min. late at night.

Make sure your total working time averages out to 8 hours or more each day and 40 hours or more each week, regardless of how long you take for lunch. A guide is to watch what people of your level do at your company. But always err on the side of caution (i.e. 8hrs/day, 40 hrs./week minimum).

READ MY LIPS....
Nothing can go against you more than coming in late, whether it is at the start of the day or at the end of lunch.
It Psychologically eats at the boss, because it registers in his mind that you don't care about the job.
