I did think that it was general knowledge that was randomly selected to be used. That is now questionable.
However, a friend of mine knew someone that was on Jeopardy and mentioned that there was a study guide for the upcoming show. Also, another champion (his name was Dave and went for the second longest time on the show as champion) made a comment after he got the Daily Double correct - he said that he had studied that. Then, the next day he lost badly after being extremely dominant.
If you want to look at something else interesting, look at certain champions and their interests or backgrounds. Sometimes, when Jeopardy! management likes a certain player, you will see at least one category (including Final Jeopardy) catered to that champion. For example, every day Ken was on, there was always literature on the board. When he left, literature categories were not used as often. Su (the nice Asian woman who was champion for a few days) saw Asian-oriented (no pun intended) categories on the board while she was on.

I think it is based on their own knowledge. Remember Ken Jennings the longest champion of Jeopardy? He is smart and read every book and everything he could think of.
