monica was a chubby child and a huge sort of teen/young adult when they were all at college together. She lost her weight as she got older and the reason you sometimes see a bloated Monica is because they flash back to times when they all met at college.
There is also some episodes where she thinks what would happen now if she was still fat.
it also explains her need for neat,tidy and everything in order as she took control of her weight and life.

If you are referring to episodes where she is very fat, this is when she was a teenager. They occasionally showed 'flashbacks' to the characters' youths.
If you are talking about minor 'bloating', this may be because Courtney Cox (the actress playing Monica) was pregnant for part of the final season. They covered it up as best they as they could, but it was still obvious she had gained weight

You must mean the flashbacks to her childhood/adolescence; Monica was supposedly ultra-fat when she was younger. It's a joke built to play on the fact that Courtney Cox, the actress who plays Monica, is so skinny that it's hard (and funny) to imagine her as so fat just a few years earlier.

Cos the character, Monica Geller, was obese as a child. The times you see her fat is during the flashbacks back to when they were in high school.
