In my opinion, there are two different kinds of "ambient" music.
The first one being mentioned before, also known as "elevator music". This is usually played in restaurants, elevators, lobbies, etc. Usually it entails of mellow jazzy tunes and/or piano music. Usually played in the background to fill the void of silence and create a positive mood.
The second (and personally more favorable to me) is the chillout kind. With that I mean the following: picture yourself on a warm beach in the summer, you've just been out clubbing. Its 6ish in the morning, the sun is rising filling the sky with an orange hue. You're laying on a couch at some beach club, a fire burning on the table in front of you with some sort of nightcap cocktail in your hand. The music you hear in the background will most likely not be some sort of jazz or piano music. The music you would hear here in this picture would probably be along the lines of the following songs:
Saltwater (Mothership mix) by Chicane
Airwave (sunset chillout mix) by Rank 1
Beyond Time (Ambient mix) by Blank & Jones
Download those songs and you will get the complete picture. They are amazing, relaxing and very chilling. Nothing heavy to draw too much attention, but just enough to justify the nights partying.

Well New Age eventually became World Music. Ambient started back in the 80's with works by Brian Eno, Vangelis and Tangerine Dream. Ambient music is heavy with keyboards and very little if any percussion (add percussion and lyrics and voila you have Chillout) often Ambient will use sound effects mainly nature sounds.
Aphex Twin does a great deal of ambient (sometimes industrial which is the crazed lustful sadistic sister of ambient),U2 even dabbled in it with the Passengers cd as did Moby. Check out Massive Attack and Kruder & Dorfmeister.
