It depends on what kind of pet: dogs are the best in understanding amongst common house animals- They know when you're talking to them and can recognize and understand many voice commands and actually know if you're refering to something you want them to do.
Cats, on the other hand, don't really care about what you say, they mostly don't even recognize their names; cats are tied to the house, not the person- if you approach them on the street, they'll run away even if they actually live with you in your house.
Parrots are also very "keen" on understanding yourr words.
Sure, they immitate, but they know why they are saying the word, for example, they can be thought to say good night and they'll say that only when it's the case.
Dolphins are the best at understanding and communicating with us, but I don't call them "common housepets".

I doubt it but I like to think my cat picks up a few words, when he gets yappy I tell him not to talk to me like that and he does get a little quieter. I can ask him what he wants and he will walk to his water dish or food dish for fresh stuff. So, I don't know. But it's cute.

He really seems to think he is having a conversation with me. I actually think my cat is more like a dog, because he does approach me on the street, though I agree with the answer above, my cat is quite the opposite. He only likes certain people. Will come up to me on the street, he runs when others come into the house. Maybe he is just a weirdo.

I think it is the tone of voice if you say something in a nice tone of voice but is not nice a pet will think it is ok, If you say something nice in a mean tone of voice they will react none accepting. I beleive a pet loves unconditionally, I have 3 cats they know they are loved ,but try it tone has alot to do with it.

Pets are listening to you the same way most people do, they do the animal equivalent of nodding their head and going yeah, yeah at appropriate moments but all the time they are thinking, when is he going to feed me?

Just look at that face when you talk to him and you will know .Yes I know my dogs know my happy voice,my baby talk ,my "I MEAN BUSINESS TALK" and etc. They certainly understand many many commands and actions that I use to communicate with them.It will become very obvious as you get to know your pet. Most dogs react in ways that will let you know what they are thinking.I call this understanding and it is truly amazing!!!Watch ,look, listen and you will soon agree I know .Good Luck!!!!!
