Consider going in September. Around March/April they usually offer the Disney Dining Plan for free with your stay. We have done this for the past 2 years (and will this year, too if it is offered)
We were able to eat at some of the finest restaurants on Disney property without paying a cent (tips are even included!)

Disney's Fort Wilderness Campground offers wonderful cabins, which can accomodate larger parties. Check out http://www.disneyworld.com and click on resorts for more info.
I also recommend staying off Disney property with a large party of 6. A great money saver for you would be to get a hotel room with a full kitchen. You can save so much money by preparing most of your meals, as opposed to eating out every day. The Lake Suites in Kissimmee have wonderful "condo-style" resort rooms which can accomodate 6-8 people or less. They have bi-level suites and single level suites, and all come complete with a full kitchen. They also offer a complimnetary shuttle service to and from the Disney parks, which leave every 30 minutes. Check them out at:
http://www.lakesuiteshotel.net/
Also check out the Best Western Lakeside. While this resort does not have a kitchen, they do have ajoining rooms so that you can all be together. Rates can be as low as $59 a night in the off-peak season and they have 3 great pools, a min. golf course, arcade/game room, decent buffet-style restaurant, friendly staff and a complimentary shuttle.
Both resorts listed above are located minutes from the Disney Resorts and they offer complimentary shuttle services. Both resorts are by far, much cheaper than a Disney Resort as well.
These months are typically the best time to visit the Walt Disney World Resort:
late January - mid March
late September - mid December
Always avoid weekends and holidays. Early January is the Walt Disney World Marathon and late October/early November is a school holiday for children in the state of Utah and Idaho. Everyone goes to the Walt Disney World Resort over this weekend (typically around Halloween) and they really crowd up the parks!

If you stay onsite, you are kind of limited where to stay. Most people with a larger family get two rooms, since you have to have two rooms they guarentee they will be connecting.
If you want one room you can stay either the All Star Music Family Suite or the Wilderness Cabins. Both will accomodate you. If you have an infant, under 2, you can stay in Riverside, which accomodates 5 plus an infant. Most of the time two rooms will be alittle less than one room that will accommodate the whole family. If you go up to rooms or suites that are more expensive you will pay a lot more, they have villas, suites, etc. that can run several hundred more per night.
Disney has specials throughout the year for certain dates to lower the costs somewhat.
When to go depends on what you are looking for. For crowds I would go between mid-January to the beginning of February or the week after Labor day until Thanksgiving and finally the week after Thanksgiving until the week before Christmas. These are the times with the lowest crowds and also the lowest rates.
Disney offers a code, for the past few years anyway, for free dining. It usually starts in mid-August, all of September and the first few days of October, but you need to book it a few months out, those are the travel dates. Currently the promotion is for mid-April through the first few days of June, but it is just for ticket upgrades.
I hope this helps you. If you have any other questions, please e-mail me, I go to Disney all the time and I love to help!
Good luck with your planning!

STAY. ON. SITE. Seriously, this will be the most fun, and save you alot of time!
I have stayed at several of the resorts and I have loved them all (deluxe to value resorts). The All-Star Music Resort is a great thematic Disney resort that has converted one of the buildings in to two room suites that sleep six. The price is pretty good too!
The best times that I have ever been would be early March and Early - Mid October. The crowds are pretty low, its warm enough for water rides, but pleasant and not stiffling hot like the summertime.

As a native Floridian, I must say that the best time of year to come to Disney would be in February or March because the weather is typically the best during that time of year. (especially if you are from up north and are not used to the Florida humidity!)
Also, as far as the rates go, don't tell the hotel at the time of your reservation that you are a party of six. Typically hotels do not charge per person and as long as your little ones can bunk up together, there is no reason a hotel should not provide you with a roll away bed.
Obviously staying at one of the Disney hotels is the best bet. All of the hotels offer bus tranportation or you can take the monorail straight into the park direclty from your hotel! This saves money on parking and it is really convenient! Best of luck and I hope your family enjoys Florida as much as I do!

Some hotels have rooms, that have a door leading into the next room. As for saving money drive about 20 minutes away from Disney and you will say about $100 dollars.
Also whatever you do, do not go to Disney in November or December usless you want to remember the worst vacation

They have the very affordably priced all star resorts, one of them has a "family suite" that accomodates a family of 6! We are going next week, and we got a terrific rate! Check the web under Disney's All Stars Resorts!!!
