I'm not sure about the high pitched noises, but there is a thing called electronic voice phenomenom. You can do this in your house. Get a tape recorded and place it in a room in your house. Turn the recorded on and leave the room. After a period of time, let's say an hour, come back and listen to the tape. Sometimes the tape will pick up noises and voices that are not physically present in the room, this is called EVP. Scientists believe that ghosts reside in frequencies higher than we can hear and the tape will pick up these noises. I did it one night when I was studying and let me tell you, what I picked up scared the hell out of me. It sounded like, for lack of a better word, a demon got next to the microphone and started talking. Everytime I think of this, i get goosebumps. Try it, it dosen't work all the time, but when you do get one, it will scare you.

It's called the "Mosquito sound". The BBC and New York Times have a nice article on it, including an MP3:

I'm 37 and I can hear it just fine. It's quite painful and annoying.

It's all about age and tension. You can use a drum for an example of what happens. When the skin on a drum is new and very taut you can blow gently on its surface and create a sound. When the skin ages--if you don't adjust its tension--the same breath will not cause a sound. Out eardrums slowly lose tension through the years and do not respond enough to high frequency sound waves to be able to send the information to the brain.
