You've got lots of good answers... but how about getting away from the tourists (OK, I know you will be one) once you have done the theme parks!
Go to:
Winter Park and take the scenic boat tour
Play some golf
Drive to New Smyrna Beach and have a picnic
Cape Canaveral
Canoe up the Wikiwa River
Blue Springs and see the manatees
Paddle around Lake Eola in a swan boat
See if there's a NASCAR race in Daytona Beach
Lots to do and see!!

Besides the obvious DIsney, universal studios, sea worldtry the Church St. Station lots of shops and arcades and shows. Rosie O'Grady Saloon. There is also Wet & Wild water park its smaller than the Disney water parks but just as much fun and cheaper and less people. There is also Ripleys Believe it or Not! Lots to see just how touristy do you want. Kissimmee isn't to far from there and they have some cool attractions on the main drag! Just driving in Florida can be interesting!

Titanic Museum, Blizzard Beach, Hot Dog Haven, Universal Islands of Adventure, EPCOT, I used to live there and now I miss it just by typing about it! Luckily it's only a two hour drive, hmmmm, I'm thinking road trip, oh and Ripley's Believe It or Not and Medievil Times and Wet N Wild......

Church Street in downtown Orlando.... Lots of night life!!! The Theme Parks aren't to shabby also.... i would also drive 45 minutes up to Daytona Beach. You can't go wrong in Orlando! There is something for everyone! Even Kissimee is fun!!!

old town. its the best. theres other bigger parks there but old town is for a nice night out.
