I have a hunch that it is Hermoine and Ron that dies in the last Harry Potter book. I gather this information because I know that the actress that plays Hermomine, Emma Watson said in an interview that she will not be returning to play the character because she has better things to do. I doubt that Harry Potter will die because he is the hero of the books and they hardly ever die but I could be proven wrong.

Where did you get the idea that 3 characters are going to die? It is not known yet how many characters are going to die, let alone who. All JKR has said on that subject is that 2 characters who she had intended to live are now going to die and one character that she had intended would die has had a reprieve.
It is the final battle in a war, I cannot imagine that only a couple of characters are going to die. After all 3 named characters died in the last book (the obvious one and 2 ministy officials) not to mention an unnamed deatheater in the fight in the tower plus loads of muggles on the bridge that was destroyed.

Well, until the book comes out this is all speculation....
Probably Voldemort (HOPEFULLY), Draco Malfoy, and Remus Lupin.... In my opinion, Harry would only have the emotions strong enough to cast the Killing Curse at Voldemort with the proper motivation, not that Dumbledore or Sirius wasn't enough... But Remus seems to just be miserable without Sirius or James, that death seems merciful.... So with Remus dying (maybe at the hands of Wormtail) Harry would kill Voldemort.. And i think Draco would be killed by Voldemort for not killing Dumbledore...

I think Voldemort has to die - she had better kill him - otherwise there's no point to all the books - and as one of the posters here has said - Harry needs enough anger to kill Voldemort finally - and for him to have that I think Ginny Weasley will be killed too. She has said that two main protagonists would die - what makes you think of a third person?

this is going to be kept top secret until july.
JK Rowling can afford a lot of lawyers and anyone who leaks the plot - or the people who die - is going to be in BIG trouble
until then, you can speculate or guess but you're not going to know for sure

I'm guessing Ron (as much as I love the guy)...aaand..Peter Pettigrew..and Voldermort.
I also believe that Dumbledore is not dead, because when they buried him, a phoenix came up from him and aren't phoenixes meant to be reborn from ashes (or something along those lines..)
