You can't send an SMS (or MMS or a phone call) to a PC by interfacing it with the USB/Bluetooth/IrDA connection, as that's only for transferring data like stored messages, contacts, etc. What you need is a middleware application server that will hook you up to a cell network carrier, allowing you to send and receive data calls like SMS. Once you get this software, you'll need to interact with its SDK in your custom app, to tell it what to do with received data, and what to send out in response.
This is how those ringtone companies do it, and it's pretty much the only way. It's expensive, too - why do you think they charge $3-5 for a 2 second low-quality audio clip? Well, it's that, and greed.

Unless you want to physically hack up the phone's hardware to force it to send call data to your PC via USB or serial, instead of via the cell network.

You need to pick up a USB cable for your phone. Radio shack carries most of them. Then you should download bitpim (do a search for it) It is a freeware program that allows you to get to the source data in your phone relatively easily.
