When someone asks, "What kind of music do you like?", I'm always left without anything to say. Here's a list of a few of the bands and artists I like:

Bach
Max Richter
The Grateful Dead

So, how do I answer the question, "What's your taste in music?"

Don't answer the question, and tell the asker that if THEY can conveniently sum up all their musical likes into one convenient genre, then they're clearly shallow beings who've conformed nicely to whatever the music industry wants them too.

My list would include Mozart, Boston, Arvo Part, Vivaldi, Rahzel, Diamond Rio...
I say:
As long as it's good, I like it.

That is to say, If there is something in the music that I admire and recognize as true talent and passion, I enjoy listening to it.

If you want one word to some up your choice, say it's "eclectic".

yeah, I have always liked most of that too plus more and have never been able to answer that question either. Actually, I'd suspect anyone who asked me and wasn't satisfied with a vague answer.
Just say you like music made by people who don't make crap.

Just tell them what I do when I get asked that question:

I am open to my musical interests and I listen to a little bit of everything.

That is the easiest way to put it.

I agree with adult alternative/classic rock, or you could always say that your taste ranges from Bach to Prince to Bob Dylan...

I don't think there's going to be one phrase, unless it's super long and hyphenated. But indie-folk-pop should be somewhere in there.
