Amy Lee from Evanescence writes all her own songs. I would have to say that the majority of rock artists write their own songs and music. Tori Amos, Sarah McLachlan, Fiona Apple all write their own songs.
Pop is a different story. There are a lot of groups and artists that are created by a team, where all the songs are written, the image is selected and all's the artist has to do is perform.

In my opinion a true artists does write their own lyrics. For most of their career, Aerosmith would write their own lyrics and music. It wasn't until their breakout of retirement(?) (on MTV with DMC) that they started accepting lyrics by other writers. I'm not really sure who the ones are that do not write their own lyrics, but I'm sure there are a lot of them.
