Usually they are put into storage or sold. There are a some private collectors with enough coin power to buy these specialty cars, but usually it is some auto museum.
The Volvo Car Museum Online has a section with cars for sale, and in that area a category called "Hollywood Cars".
There are all sorts of vehicles for sale. Cars from the Flintones Movies, The Sleigh from "How the Grinch Stole Christmas" with Jim Carrey, many others. It's been sold now, but last year they had one of the "Ecto 1"'s from "Ghost Busters". Check it out.

The big studios maintain them in storage. Others must release them to their owners.
