what is the name given to just plain soil?? i.e.: no added nutrients etc.

All soil normally contains some kind of nutrient, Sometimes it is lacking in available nutrient that is why we add fertilizers or other other trace elements to raise and lower pH depending on what the plants you intend to grow require.
I am not sure what you mean by plain soil. All Soil is just that Soil. It maybe different in it make up, eg Sandy soil, Clay Soil, or Loamy Soil.
