vehicle is probably overheating not necessarily head gasket could be rad,thermostat,water pump,get it pressure tested at your local garage

most likely cause is blown headgasket ...if thermostat got stuck in a closed position for any amount of time this would proberley blow the head gasket any way ..hissing ound is pressure realase ...dont not remove when hot and hissing or you coild get scalded ..

Its releasing the pressure from overheating, can often be a sign that the headgasket is blown (expensive) or perhaps a thermostat depending on the age of your car. Anyway hope that helps and is not too costly!

Sounds like your short on water maybe check the level when cold, worst still could be the old head gasket!!
