By Anansi or coyote you mean what is our favorite trickster story, yes?
Hard to pick, as the "trickster" is a character evident in many, many cultural stories, myths and legends. Personally I was always partial to the Norse mythology and the character of Loki.
I also like how Anansi, the spider-man has been incorporated into current mythology and stories, albeit not in the traditional fashion.

I guess if I had to pick one, I'd say "How the Moon Got Its Craters" because I like the reference to digging through the earth to other side. In our mythology that leads to China, but in the story here it leads to Hawaii.

The story about the tar-baby... where Anansi tried to steal food, but got stuck to it instead... I like this one because it was the first time Anansi got tricked him/herself. It is a story filled with morals.

I would suggest some of the works of Charles deLint, he seems to like most of the forms of "Trickster", and in the form of the step-father to humanity, Coyote, Fox, Raven, Crow, Nightingale. His other works also seem to believe in the "learn from your mistakes" ideal common to this shamanic path. Some seem closer to Kokopelli (sp?) but they are close cousins after all. I hope you like it. I most certainly do.
