Not so much to look professional as to look restrained and reserved and non-threatening. Mostly, he or she probably thinks it makes you look professonal or tough because they see military personnel stand at "Parade Rest" or "At Ease" with their hands behind their back.

Now, if you have a maglite or stun gun or something else in your hand, then it's nice to hide them out of site so as not to make attendees feel threatened. It may also be that he doesn't want you touching attendees. Some people will sue and accuse you of all kinds of things just for touching them...like maybe you were trying to grab someone's body parts, etc.

Thus, the issue could be for liability concerns.

Now, if your job were close protection, hands would be in front. You'd work the crowd, discretely using techniques such as checking for weapons while moving someone along with your hands or brushing against them. You'd want your hands in front and ready to deflect, strike, seize or whatever else.

Your job isn't necessarily to intimidate or protect, it's also to present a friendly reassuring pressence. The protection must come in a friendly package, hence the hands behind the back.
