I would say, it depends on the character.
You can give your character one more layer if you pick a 'regional' last name, or a last name with some history.
For instance 'De'Medici' is a tuscan last name that is associated with the Medici family, which was head of Florence (some popes were also from that family).
Last names from Veneto often end in 'n', like 'Visentin'.
Or a typical last name from Milan, could be 'Brambilla'.
If you want to go southern italian, 'Esposito' for Naples or 'Greco' for Sicily are good ones.
