I think that's part of human nature really. We're designed in such a way as to keep wanting even after we've got what we always longed for. There is just no satisfaction! This is in order to come to the utmost desire after we have gone from one to the other; if there was satisfaction, then this utmost desire would never come into our heart.
This one fundamental desire that will cover up all the desires lies in something other than physical possessions or cravings and this is why we are restless in terms of our origin and where we are going...who created us and why? what's the purpose of my being? etc. In other words, the desire to be satisfied with the mysteries of existence and of our creator, whoever that is.
This is the significance of being human! that one desire that keeps us looking up in the heavens and wondering the meaning of all that infinitely vast space full of stars and galaxies...who made it? why? what's in it for me? this is the ultimate desire that covers up all the physical/animal desires our animal part longs for. Once (hopefully) satisfied with this desire, you have conquered life and existence; you are enlightened!

Could it be that the thrill of the chase is gone? Half of the battle is getting there is it not? Once you get to your final destination, the thrill is gone, there is nothing left to do, except aim higher. For many people who have already met fame, wealth or sex, they chose more deadly routes for kix. Is it worth it, not usually.

You no longer feel the need to get it anymore because you already have it. And doing it again would just not be as fun because now you know what it is like.

I think people have a tendency to want what they don't really need. People ultimately want to be happy, and unfortunately, it takes some of us a long time to realize that what we need to be happy we probably already have: A loving family, enough money to live on, food, clothing and shelter.

we crave challenges because a challenge means it's WORTH getting or has value. once we have a thing it is less appealing because there no longer exists any prevelence of perceived value

because for them the appeal has worn off and they no longer are that eager to pursue it anymore. it could also be because one no longer has the same hunger and desire to obtain and pursue whatever it is he/she was initially striving for
